HTN is pleased to provide news on industry events and upcoming promotions. Many of the promotions listed here are exclusive to HTN Apprentice Chefs and Hospitality Trainees.  

Sandhurst Fine Foods - 'The Best Antipasto Recipe' Competition, exclusive only to HTN Apprentices and Trainees.

The aim of the "The Best Antipasto Recipe" competition (a competition exclusive only to HTN Apprentices and Trainees) is to find the most original, creative and innovative recipe using one or more of Sandhurst products as the main ingredient.  A list of their product range can be found on www.sandhurstfinefoods.com.au.

There is no limit to what can be made, from Canapes, Entrees, Mains, Drinks, Desserts and the favourite of all Buffet Platters.

The key competencies which we are looking at are originality, innovation, cost and creativity.

The winner will have the main four competencies covered very well.  No ideas are out of the question.

The way in which to lodge your entry is simple.  Complete the recipe card (click here) and ensure all requirements are completed.  A photograph of the dish is most critical as this is the only visual Sandhurst will get.  If one photograph does your dish no justice, then don't be afraid to add a few extra.  Entries can be sent to reza@sandhurstfinefoods.com.au by the 30th November, 2010.

The winner will be treated to a dinner for two at Big Mammas Trattoria, 51 Moncur Street in Woollahra, Sydney.  Sandhurst will organise dinner and drinks, and also a tour of the fabulous kitchen by the Executive Chef.

Winner of the 2010 HTN Apprentice Chef's Culinary Challenge Announced

HTN has recently offered 3rd Year Apprentice Chefs the opportunity to showcase their talents in the 2010 HTN Apprentice Chef's Culinary Challenge.  This culinary challenge was exclusive to HTN Apprentices and was held on Wednesday 23rd June during the 2010 Food Services Australia Expo at the Sydney Convention & Exhibition Centre.

The major prize of $5,000 was won by Vanessa Blake, who is currently working at Trippas White Catering - Art Gallery of N.S.W.  Vanessa also received a 125 year anniversary knife from Victorinox. 

Vanessa said that "she will use the money she has won to travel to Europe next year, in particular when she visits Germany with her Sous Chef".  Whilst there her Sous Chef will be organising opportunities to work in various establishments. 

(STEP) - A project funded by DEEWR

Recently DEEWR provided funding to HTN to coordinate STEP, a Structured Training Employment Program, to assist indigenous participants in to a Commercial Cookery Apprenticeship.  Please click here for more information on the project and to view how the program has provided a head start to the individuals who participated. 

2010 HTN and MARS Food Australia Apprentice Chef Culinary Competiton - Grand Final

In excess of 280 commercial cookery apprentices have now competed in the 2010 HTN and MARS Food Australia Apprentice Chef's Culinary Competition series which encompassed ten (10) regional heats coordinated throughout NSW and ACT - thus providing the industry with the largest and most exciting commercial cookery competition in the country. 

The series Grand Final will be held on Tuesday, 7th September 2010 at TAFE NSW Northern Sydney Institute - Ryde College. 

MARS Food Australia, Meat and Livestock Australia (MLA), Krio Krush, MAS National, Fraser & Hughes, Futura Training, Hennessy Coffee, Sandhurst Fine Foods, Cobram Estate, Australian Olive Association, TAFE NSW and CIT have generously supported HTN as sponsors of this initiative, ensuring that the commercial cookery sector's future is assured.

HotClub Barista Cup

The HotClub Cup is a Barista Competition for Hotels, Clubs and Pubs that will be running in conjunction with the 2010 HTN and MARS Food Australia Apprentice Chef's Culinary Competition Grand Final.

This event will be held on Tuesday 7th September, 2010 at TAFE NSW Northern Sydney Institute - Ryde College.

HTN Peter Howard Culinary Scholarship 2010

The HTN Peter Howard Culinary Scholarship is another benefit that is exclusive to HTN apprentices and trainees.  The winner will be announced in October 2010, and will receive a travel and study package that includes return airfares to London and $5,000 spending money.  This scholarship is designed to enhance the recipient's professional and personal development and has been provided through the support of our sponsors and the Tourism, Hospitality and Catering Institute of Australia (THCIA).

2009 Scholarship recipient James Fairbank will be travelling to Europe to explore the latest techniques being used in desserts and to further his culinary knowledge.  HTN Apprentices and trainees can "self nominate" by creating and submitting a portfolio with the criteria outlined in the application.  For your copy of the application please click here

Please note that this scholarship is not awarded to apprentices or trainees who have excelled at competition but rather a candidate who is a great ambassador for the art of cookery, the hospitality industry and HTN. 

We are no longer accepting applications for 2010 with the winner to be announced at the 2010 HTN Youth Skills Showcase in October. 

HTN Peter Howard Future Chef Scholarship 2010

Each year, HTN selects one (1) HSC student to be the recipient of our prestigious Peter Howard Future Chef Scholarship.  This scholarship enables hands-on work experience and training with one of HTN's leading industry partners and assistance with travel costs to an approved capital city.  We will announce the winner in October at the HTN Youth Skills Showcase and the successful student must be available to take part in the scholarship experience any time in the last 12 days of January 2011.

CIRA Gala Dinner - "Mangiando Attraverso L'Italia"

The event will reach a grand finale on the evening of Monday 13 September with a formal 5-course dinner.  "Mangiando Attraverso L'Italia" (Eating throughout Italy) dinner will be prepared by chefs from Buon Ricordo, Lucio's, Pilu at Freshwater, Ormeggio at the Spit, Manly Pavillion, Stella Blu, Pendolino and held at Miramare Gardens in Terrey Hills.

A series of World Cuisine Master Classes featuring cuisines from around the globe will take place in the demonstration kitchens at Ryde College.  Displaying dishes from Brazil to China to the world of molecular gastronomy, the classes will showcase the talents of Master Chefs from Australia's leading restaurants and around the world.
